2 lbs. bread cubes
1 lb. butter
1 large onion, chopped finely
2 ½ c. celery, chopped
3 tsp. sage
2 ½ c. water
Salt and pepper to taste

Sautee butter, onion, and celery until celery softens
Add sage and water to pan and blend well

Put bread cubes in a large mixing bowl and slowly dump this mixture over the bread cubes — mixing all the while
Do not dump it all at once as bread will quickly absorb the water and you want it evenly distributed

Note from Gram: Cube about 2 loaves of Italian bread that has started to turn dry. Buy three days early or so. Be sure not to skimp on the butter because you won’t get the same result.
