1 lb ground beef
1/2 medium onion, chopped fine
2 cloves garlic, chopped fine
1 Tbsp Italian seasoning
Salt and pepper to taste
1 box jumbo pasta shells
16 oz spaghetti sauce
16 oz ricotta cheese
1 cup Mozzarella cheese
1 cup Parmesan cheese
1 cup Asiago cheese

Boil shells; drain and rinse with cold water. Take care not to overcook shells since they need to be sturdy enough to hold ingredients. Set aside.

Brown ground beef. When ground beef is almost browned, add onion, garlic and seasonings. Drain meat and add to large mixing bowl. Add ricotta cheese. Stir with hands or large mixing spoon-do not use mixer.

In a 9 X 13 pan, pour 1/3 the spaghetti sauce on the bottom of the pan to cover. Scoop out meat mixture and stuff inside shell. Lay shells face up in the pan. When all shells have been stuffed, pour the remaining spaghetti sauce over the top. Sprinkle cheeses on top. Bake in 350º oven for 15-20 minutes or until cheese is bubbly.
