1 cup brown sugar
1/4 cup butter
1 large can sliced pineapple in juice
3 eggs, separated
1 cup white sugar
8-10 Tbs. pineapple juice
1/4 tsp. vanilla
1-1/8 cup flour
1 tsp. baking powder

Directions:
Directions:
Preheat oven to 350º

Melt brown sugar and butter in cast iron skillet. Add sliced pineapple rings and set aside.

Beat egg yolks with white sugar until light and fluffy. Add pineapple juice and vanilla and mix thoroughly.

Beat egg whites until stiff and fold into batter. Pour over pineapple slices and bake for 30 minutes.

Reduce heat to 250 and bake another 10-20 minutes.

This was my grandmother's recipe, so it's old as baseball. I remember it being a standard 10" skillet, I think. 9" would do also, but might add to the bake time.
