2 to 3 large - sweet potatoes, unpeeled
¼ tsp. - salt
¼ c. - butter OR margarine, melted
1 tsp. - cinnamon
1 c. - sugar
2 - eggs, beaten
½ tsp. - ground allspice
¾ c. - milk
1 tsp. - vanilla
9 inch unbaked pie shell

Clean or scrub sweet potatoes and cook for 20 minutes or until soft. Drain and peel mash enough to make 2 cups, let cool completely. Combine margarine or butter, salt, sugar, cinnamon and allspice in a large mixing bowl. Then add sweet potatoes and eggs and beat until smooth, gradually add milk and vanilla beating well. Pour mixture into pie or pastry shell. Bake at 350º until set. Serve warm or cold. I top mine with marshmallow fluff.
