2 1/4 c flour
1 2/3 c sugar
1 1/4 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2/3 c shortening
2/3 c buttermilk (1 tsp vinegar in buttermilk and let stand)
3 eggs
1 1/4 c mashed ripe bananas (3 medium bananas)
1 tsp banana flavoring
2/3 c chopped nuts (if desired)

Icing:
1 tsp butter
2 c confectioner sugar
1 tsp vanilla
3 tsp water or milk (add more if needed)

Directions:
Directions:
Grease and flour an oblong pan 13 x 9 x 2. Preheat oven to 350 degrees.

Cake: Measure all ingredients in large mixing bowl. Blend for 30 seconds on low speed then blend on high speed for 3 minutes. Pour batter in pan. Bake for 45 to 50 minutes.

Icing: Mix all ingredients together. Add more confectioner sugar if needed. Put on cake when cake is cold.
