2¼ cups flour
1 pkg 3-4 oz pistachio instant pudding
1 tsp baking soda
1 cup butter (2 sticks)
1 cup powdered sugar
1 tsp almond extract
2 eggs
6 oz pkg of salted shelled pistachios

Directions:
Directions:
Mix flour, dry pudding mix and baking soda and set aside. In a separate bowl beat butter, sugar and extract until light and fluffy. Add eggs and mix well. Take a damp paper towel and wipe some of the salt off half of the pistachios. Coarsely chop the nuts. Gradually add the flour and nuts beating well after each addition. Drop by small tablespoonfuls onto ungreased cookie sheet. Bake at 375º for 8 to 10 minutes or until lightly browned. cool completely on racks.

Icing: make a glaze using almond flavoring, See anise cookie recipe. chop the remaining salted nuts and sprinkle on glazed cookies, while glaze is wet.
