Use bananas that were frozen
1/3 c. shortening
2/3 c. sugar
2 eggs at room temperature
1/4 c. milk
1 tsp. vinegar
1c. mashed bananas (2-3 bananas)
1c. + 2 tsp. unsifted flour
1/2 tsp salt
1/2 tsp. baking soda
Optional
1c. seedless raisins
1/2 c. chopped nuts

Directions:
Directions:
In a large bowel, combine shortening, sugar and eggs
Beat until light & creamy
In a small bowl, combine milk & vinegar
Add mashed bananas to milk-vinegar
Combine flour, baking powder and baking soda
Stir into the creamed mixture stirring alternately with the banana mixture beginning and ending with flour
Fold in nuts & raisins

Spoon into 4 well greased loaf pans 6x 3.12
Bake in preheated oven 375º oven for 25-30 minutes for smaller pans
50-55 minutes for larger pans.

Makes 4 small loves or 1 large loaf
