2 cups light brown sugar
1 cup Crisco
2 eggs well beaten
3 1/2 cups pre-sifted flour
1 cup buttermilk
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon vanilla

Icing
1/3 cup butter or margarine - soft
2 cups confectioners sugar
2 tablespoons milk
1 1/2 teaspoons vanilla
1/4 teaspoon salt
mix all together

Directions:
Directions:
preheat over 350º
hand mix only - no mixers
mix brown sugar and Crisco until creamy
add beaten eggs and mix well
add buttermilk alternate with 3 cups flour and fold (do not beat)
add baking powder and baking soda to the last 1/2 cup of flour and add to mix
add vanilla - fold into mixture

drop by teaspoons onto greased cookie sheet
sprinkle with white sugar
bake at 350º for 12 minutes or until cookie is firm

These are light and soft cookies. Leave on cookie sheet for 5 minutes before removing.
When cooled, add icing
