1 1/2 c sugar
1 1/2 c brown sugar
1 c milk
1 c chopped dates
1 c chopped walnuts
1 T butter
1 tsp vanilla

Directions:
Directions:
First:in a heavy saucepan, mix both sugars and milk. Cook over medium heat to the soft ball stage. (234 degrees on a candy thermometer. Then add dates, walnuts and butter. Slowly cook, stirring occasionally to the fir.m ball stage (248 degrees) or until spoon leaves path when stirring.

Second: add vanilla and let cool. After cool, beat until cream and stiff. Empty the mixture onto a damp towel or cloth; shape into loaf. Wrap with towel then aluminum foil. Store until ready to serve. Slice with a knife.

Use a candy thermometer. I have found the soft and firm stage is unreliable.
