1/2 c. shortening
1 1/2 c. sugar
2 eggs
2 c. flour
1/4 tsp baking POWDER
3/4 tsp baking SODA
1/2 tsp salt
2-3 ripe bananas, mashed (1 cup bananas)
1/4 c. buttermilk (if you don't have buttermilk, add 1/4 tsp of vinegar or lemon juice to the milk and let sit for 2-3 minutes)
1 tsp. vanilla
Your favorite buttercream frosting

Directions:

Cream together shortening and sugar. Add the eggs and beat until fluffy.
Sift together flour, baking powder, baking soda and salt. Add to other ingredients and mix for 2 minutes at medium speed.
Add bananas, buttermilk, and vanilla. Beat at medium speed until well-blended.
Bake for 30-35 minutes in two greased 9 inch layer pans at 350ºF.
Cool completely, remove from pan and frost..

I usually bake mine in loaf pans, so they may take a little more time - do the toothpick check starting around 25 minutes. Can't say I ever saw Gram make this in a loaf pan- hers was always presented a delicious layer cake!
