1 cup Matzo Meal
1/2 cup Club Soda
4 eggs
1/3 cup canola oil
1tsp salt
dash of pepper

Directions:

Beat eggs in a medium sized mixing bowl, add club soda, oil, salt/pepper and mix well.
Add Matzo Meal and stir thoroughly.
Refrigerate 1 hour.
Fill a large pot with water (about 1/2 way up) and bring to a low boil. (not too rolling of a boil...it will break up the matzo balls)
Wet hands and shape matzo ball mixture into palm sized balls. Drop into pot carefully.
low boil (more then a simmer) for about 30min., turning them over about 1/2 way through.
Take out of pot using a large slotted spoon to drain a bit. Add to chicken soup.

Grandma Jackie ALWAYS swore by club soda in her matzo balls. She would say it made them light and fluffy.
