One boneless pork loin.
2 bunches cilantro
2 cans water chestnuts, chopped
8 cloves garlic, minced
1/2 cup olive oil
salt and pepper

Directions:
Directions:
Slice loin horizontally into two pieces. Mix the other ingredients together to form a stuffing. Spread the stuffing on one slice of the loin; cover with the other slice; roll and tie.
Roast at 350 for two hours or until meat thermometer indicates that it is done. Slice into nice pieces and serve.
