1 ham bone I leave meat on the bone while it cooks

4 cups leftover ham

2 cups dry navy beans

2 cups celery chopped

2 cups carrots chopped

1 large onion finely chopped

3 cloves garlic finely minced

4 sprigs fresh thyme or 2 teaspoons dry

1/4 cup fresh parsley or 1 tbsp. dry

1/2 teaspoon fresh ground pepper

8-9 cups chicken stock

1 tbsp olive oil for sautéing vegetables

A loaf of Soft Warm Bread

Directions:
Directions:
Prepare dried beans by soaking them in cold water for 8-10 hours, then drain and rinse. (I do this the night before).

In a large pan heat oil and sauté celery, carrots, onions, and garlic until tender.

Add chicken stock, ham bone, and ham. Transfer to a larger pot if necessary.

Add beans, parsley, thyme, and pepper.

Bring to a boil, then reduce heat and simmer covered for 2-3 hours.

Chop up large pieces of the ham before serving.

Ladle Soup into Bowls, serve with a lot of warm fresh Bread and Butter on the side and a Jalapeno.

you can also garnish with a little chopped green onion also. (a Personal favorite)

Gramma Nadine was an Amazing woman... a firecracker if there ever was one... This is another of those cherished food memories I have as a child that is still a favorite to this day... as a matter of fact, this is how I became a Chili Head thanks to my sister playing a joke on me in the kitchen with the aforementioned Jalapenos that my grandpa and grandma were always growing alongside the house. She said "here bite into this" I was maybe 7 or 8 years old at the time..grandma had just finished making these beans and there were Jalapenos on the counter, my Sissy said "no it won't be Hot try It" so dummy me took a huge chunk of fresh Jalapeno pepper a whole mouthful of a bite..... needless to say, it was unforgettable if not painful moment then and later..as I would learn. But after that, I learned to love Chilis... Thank you, Sissy...and Thank you, Grandma Nadine, for such Amazing food and memories.
