2 c flour
2/3 c cocoa
1 tsp salt
1 tsp baking powder
1 tsp baking soda
2 c sugar
2 eggs
1 c whole milk
1/2 c oil
1 tsp vanilla
2 tbsp espresso in 1 c boiling water

Directions:
Preheat oven to 325º
1- Sift all dry ingredients in medium bowl
2- Combine wet ingredients in separate bowl and whisk till well blended
3- Pour wet over dry ingredients and whisk together
4- Pour into cupcake liners, filling to about 1/2 - 2/3 full
5- Bake for approx 15-20 minutes til cupcakes are puffed and feel springy.
6- Let cool completely on wire rack
