Ingredients: 1 c margarine 2 c sugar 2 eggs 1/2 c sour cream combined with 1/2 c whip cream 1 c milk 3 tsp peppermint extract 2 tsp baking ammonia 2 tsp baking powder 4-5 c flour

Directions: |
Directions:1- Heat milk to scald but not boil 2- In bowl mix 1/3 c of the scalded milk with the baking ammonia. Let stand for 1 hour. 3- Mix margarine, sugar and eggs well 4- Add sour cream/whip cream mixture, remaining 2/3 c milk and all other ingrenients. 5- Add flour. Will make a sticky dough. 6- Chill well. Overnight if possible. 7- Preheat oven to 375º 8- Roll out small portions at a time on well floured surface, not too thin and cut out desired shapes 9- Bake approx 10-12 min till springs back to touch. Careful not too bake too long. These aren't baked to brown. 10- Frost with icing of choice. I do a regular icing with a hint of peppermint and pink food coloring.
** baking ammonia and peppermint extract can be hard to find. I have found them at Mom's Nutrition Centre on 22nd st. ** careful when mixing ammonia as it is very strong. Cookies though will have just a mild peppermint flavor. Tha ammonia is the agent used to rise the cookies.

Notes: This was Auntie Carri's favorite cookie growing up, and still is. It came from my Dad's sister Kathy, who always brought some for family Christmas gatherings. I can almost smell them right now!
