4 chicken breasts, bone in, skin on
4 chicken thighs, bone in, skin on
2 chicken drumsticks
Water
Head of celery, washed and cut into chunks
1 bunch of carrots, washed, peeled, and cut into chunks
2 yellow onions, peeled and cut into chunks
1 or 2 cans chicken broth (optional)

Rinse all the chicken pieces and pull the skin off. Discard skin in sealed plastic bag. Rinse chicken again and place in very large pot. Fill about half way with water, making sure the chicken is covered. Cover pot. Bring to a boil.

Add celery, carrots, and onions and bring to boil again. Add more water (or some chicken broth) if necessary and bring to boil again. Reduce heat to simmer, cover pot, and allow it to simmer for an hour or two. You may need to periodically skim chicken fat (schmaltz) off the top of the soup with a slotted spoon.

When ready to serve, pull chicken off the bones and discard bones. Put some chicken in each bowl and fill bowl with soup and veggies.It may need salt and/or pepper.

Serve with crackers. Enjoy!

This recipe is the true, hard core Jewish Penicillin. I made this recipe for y'all anytime you were sick. But it is time consuming, and a little yucky skinning the chicken. But boy, it works! Anyone will feel better after eating this.

It's also good if you want to throw some egg noodles in about 5 minutes before you serve it. That makes it Chicken Noodle Jewish Penicillin.

Be very careful that none of the raw chicken touches your countertops or sink, and that nothing splashes when you are rinsing the chicken. Wipe off your countertops and sink with water, Clorox wipes, and water again. Use paper towels, not your sponge or your dishcloth. Use paper towels to dry your hands after washing them.
