1/3 cup fresh squeezed lemon juice
2/3 cup canola oil
1 teaspoon minced garlic
salt and pepper to taste

Cut about 4 large lemons in half and juice them. Pour the juice in a jar with a tight fitting lid. Add enough canola (or any vegetable oil) to make the ratio equal to 2/3 oil to 1/3 lemon juice. Add minced garlic (I use the little jars of minced garlic), salt (or garlic salt), and pepper (I add a lot of pepper....about a teaspoon per cup of liquid). Shake well and taste. Add more salt and pepper if needed, or more oil and lemon juice if too salty.

This recipe was taught to me by my Grandma, Minnie Duval. I remember I was 7 years old, in her kitchen at 3731 Charleston, when she taught me how to make this delicious, tart, fresh dressing.

You can store any unused portion in the fridge for up to about 2 weeks. It is delicious on green salad, steamed veggies, noodles, and rice!
