½ cup real Butter
½ cup Brown Sugar
2 Tablespoons dried Lavender Flowers preferably ground fine
1 Egg or 1/3 Cup water
2 Tablespoons Milk (any milk or milk substitute will do.)
1 teaspoon real Vanilla
1 cup Oatmeal
1 cup Barley Flour
½ cup Whole Wheat Flour
¾ teaspoons Baking Powder
1 cup Dark Chocolate Chips

You can use 1 1/2 cups of white flour for the barley and whole wheat flour

Directions:
Directions:
1. Preheat the Oven to 350 F
2. Blend together the butter, sugar and lavender until smooth.
3. Add the egg (or water), Milk and Vanilla
4. In a separate bowl mix together Oatmeal, flour and baking powder.
5. Stir the Chocolate chips into your dry mix
6. Combine the wet and dry ingredients.
7. Spoon the batter onto a baking tray. Use parchment paper for easy cleanup.
8. Bake for 10 Minutes for soft cookies and 15 minutes for crispy cookies.

Variations:

1. Add 3 or 4 pieces of chopped up crystallized Ginger to the batter.
2. Add 1 cup of nuts, raisins, coconut or dried sweet cranberries or cherries.
3. Make the base of the cookie chocolate by adding ½ cup cocoa powder in with the flour and continue the recipe as instructed.

The first time I heard of these cookies I said “Chocolate and Lavender? Why?” and then I tasted them when they were cold and went “Wow. It’s great.” These have now become one of my favorite cookies.
