2 eggs
1 cup brown sugar
1 cup shortening
6 Tbsp honey/syrup
1 tsp vanilla
1 1/2 tsp Baking soda
1/2 tsp baking powder
3 cups flour

Directions:
Directions:
Mix eggs, shortening, sugar, vanilla and honey together well. Mix well flour, baking soda and baking powder together well and add gradually to wet ingredients. Roll out dough onto floured counter. Cut with cookie cutter or glass. Bake at 350º F for 8 min. While cookies are still hot, place jam between 2 cookies. Let cool.
Variation: for molasses cookies, add molasses instead of honey, then add 1/4 tsp cloves, 1/4 tsp ginger, and 1 tsp cinnamon.
