4c Green Zucchini (approx 3) diced
1c onions chopped
1/2c butter
2 tsp dry parsley
2 well beaten eggs
12oz mixed cheese: Mont jack/cheddar-any will do
8oz Pillsbury Crescent Rolls
2 tsp prepared mustard
1/4tsp each of garlic, basil, oregano
1/2tsp pepper

Preheat oven to 375

In 10" skillet - melt butter - place zucchini and onions in pan and cook approx. 10 minutes to your liking. Stir in herbs/spices. Take off heat. In large bowl mix eggs then add cheese. Stir in zucchini mixture. In Pie pan, line with crescent rolls to form crust, spread mustard on bottom then place zucchini mixture in. Bake for 18-20 minutes.
