Ingredients: Dough 3/4 C flour 1 t olive oil 1/2 t salt 2 eggs 3 T water
Filling 2 lb ground veal, 1 lb beef, 1/2 lb pork 3 pkgs chopped frozen spinach pepper and salt to taste 1/4 t all spice (optional) 1 t oregano 1/2 C fresh chopped fine parsley 3 cloves chopped garlic

Directions:Mix dough ingredients together. Knead until smooth. Let sit for 1/2 hour at least (cover with Saran wrap). This makes one layer of dough.
Filling: Brown meat (mash w. fork so no lumps) brown the meat and then add the spinach. When spinach starts clinging to side of pan, add all of the rest of the ingredients and cook.
Put in bowl and add Parmesan or Kaseri Cheese, bread crumb and 2 or three eggs. You want it to stick together but not be wet.
Roll the dough out until so thin that you can see the pink of your fingers under it when your hand is placed underneath.
Spread the meat mixture on top of the dough and then add the second rolled out dough layer over the top of the filling.
Use great-grandma Santilli's raviolli rolling pin (Josette has it), or your own ravioli rolling pin, raivioli forms, or glass to cut out the raviolis. I always use a fork after to pinch around each edge.
Freeze on cookie sheets and then put in ziplocks in freezer until ready to cook. Cook on a low boil until float to the top. Serve with your favorite red sauce. |

Notes: Ask Steve, Phil, or Josette what memories come back when they bite into these raviolis......they are transformed back into Grandma Santilli's house.....of course Josette always had to sit at the kid's table in the kitchen.
These ravioli's are always a bit tricky to make. Grandma S. had it down and got very few ravs that fell apart while boiling. I have tried rolling the pin lightly over the dough before spooking the filling on and then pinching the edges to try to minimize the ravs falling apart in the water....next time I am going to try using a glass to cut out individual rounds and put the filling on with another round on top...this is how Sue Gatto does hers.....maybe they'll hold better....I'll let you know. This definitely is a half a day project and Lonnie is always a huge help....Grazie!
