3/4 c sugar
2 8 oz pkgs cream cheese
2 eggs
1 tsp lemon jiuce
1 tsp vanilla
1 box nilla wafers

Topping
cherry pie filling
chocolate chips
melted chocolate
nutella
jam of choice

Directions:
Directions:
Preheat oven to 375º
1- Mix ingredients with blender or whisk till smooth
2- Place wafer flat side down in liner in cupcake tin
3- Place approx 1 tbsp of filling on top of wafer
4- Sprinkle a few chocolate chips on top if desired
5- Bake for 9 minutes
6- Cool and top with filling or topping of choice
7- Can also swirl nutella or jam into batter

Mini cheesecakes are a great little treat at Christmas or any event. You can vary it so much by both the toppings, swirling flavors into the filling, or even by switching out the base and using chocolate wafers or graham crusts.
