Whole chicken
Big pot

Dumplings
3 cups flour
1/4 cup chicken fat
3/4 cup chicken broth
1 teaspoon salt

Directions:
Directions:
Place chicken in a big kettle and fill with water and bring to a boil and then turn down and cook for several hrs.

Remove chicken when cooked and then skim the chicken fat off the top of broth. Set aside to cool. Then remove about a cup of broth and set aside to cool.

Place flour and salt in bowl and add chicken fat. Gradually add chicken broth to the mixture until it becomes doughy. Taste and add more salt if needed

Place flour on flat surface and split dough into 2 balls. Take the first ball and roll out then cut into strips.


Bring broth in kettle to a boil and salt and pepper to taste. Once it begins to boil start dropping the cut pieces into the broth. Once both balls have been rolled cut and added pull chicken meat and add to dumplings. Serve the rest of chicken as a side.
