2 1/4 cups Gold Medal™ all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter, softened
3/4 cup granulated sugar
3/4 cup packed light brown sugar
1 egg
1 teaspoon good vanilla (Madagascar or bourbon vanilla)
2 cups semisweet chocolate chips
1 cup coarsely chopped walnuts, if desired (I add them)

Preheat oven to 375°F. Bake cookies on middle oven rack and it’s best to bake one sheet in the oven at a time.
In a bowl, mix flour, baking soda and salt; set aside. In large bowl or Stand-up Mixer, beat softened butter and sugars on medium speed (3 if using a Kitchen Aide Mixer), or mix with spoon for about 1 minute until fluffy and all sugars are incorporated, scraping side of bowl occasionally during this process. Then Beat in 1 egg and the vanilla until smooth. Turn mixer on low or 1 and slowly add flour mixture and them add chocolate chips and nuts. (dough will be stiff). Onto ungreased cookie sheets, drop dough by rounded tablespoonfuls 2 inches apart. Bake 8 to 10 minutes or until light brown but check after 8 and then if not light brown check again at 9 (centers will be soft). Cool down on sheet for 2 minutes then remove from cookie sheet to a cooling rack. Cool completely, about 30 minutes. Store covered in airtight container.
