1 2/3 cup all purpose flour
1 1/3 cup sugar
1 tsp. baking soda
1/4 tsp. baking powder
1/2 tsp. salt
1/2 tsp. ground cinnamon
1/2 tsp. ground cloves
1/3 cup skim milk
1/3 cup chopped walnuts
2/3 cup chopped raisins
1 1/3 cup applesauce
2 egg whites or 1/4 cup egg substitute
non-stick cooking spray
1/4 tsp. ground all spice
powdered sugar for garnish

Preheat oven to 350ºF. Spray bottom of 9 inch square pan with non-stick spray. In mixing bowl, sift together, flour, sugar, baking soda, baking powder, salt and spices. Add milk, nuts, raisins and applesauce. Beat 2 minutes with electric mixer or 300 strokes by hand. Turn batter into baking pan and bake about 30 minutes. Let cake cook in pan 15 to 20 minutes before turning onto cooling rack. When completely cool, dust top with powdered sugar. Serves 9.
