3 C flour
2 ½ C sugar
1 T + 1 t baking soda
½ t salt
1 C baking cocoa
¼ C drinking hot chocolate powder
either ¼ C buttermilk powder and 1 ½ C milk
or 1 ½ C buttermilk
3 large eggs
1 t vanilla
1 1/3 C canola oil
1 1/2 C boiling water

24 oz. milk chocolate chips
1 ½ C heavy whipping cream

Directions:
Directions:
Preheat oven to 350. Mix all dry ingredients and whisk well. Add all wet ingredients except boiling water and mix with mixer. Slowly add water. Mix for several minutes. I spray and line bottom with parchment four 8” pans but you can do bigger pans. Bake for 30-35 minutes and let cool in pan completely.

In double boiler, add cream and chocolate chips and heat on medium. Do not stir. Wait until chips look very shiny and are probably melted through. Remove from heat and stir well. Put one cake on the dish and add frosting and layer cake. Pour frosting over top and let it run down sides of the cake.
