5 large Russet potatoes
5 Tbsp. butter, melted
3/4 c. each shredded Cheddar
cheese and Jack cheese

Directions:
Directions:
Scrub potatoes and pierce with fork. Bake at 400 degrees for 1
hour or until done. Cool. Cut each potato into quarters.
With a spoon, scoop flesh from skins, leaving 1/8-inch thick
shell. Reserve flesh for other uses. Brush potato skins
inside and out with butter. Place cut side up in a single
layer on a 12 x 15-inch pan. Bake in 500 degrees oven for 12 minutes
or until crisp. Remove from oven, sprinkle with cheeses.
Broil 4-inches from heat until cheese melts. Serve with salsa
for dipping. Makes 20 appetizers.
