1 c. milk
2 tsp white vinegar
1/2 tsp baking soda

1 c. flour
1 tsp baking powder
1/4 tsp salt

1 egg
2 T. oil -or- 3 T. melted butter + 1 T. oil

Directions:
Directions:
Mix milk, vinegar and baking soda. Set aside.

Mix next 3 dry ingredients.

Whisk together egg and oil. Add it to the milk mixture.

Combine wet and dry ingredients (a few lumps are okay). Let sit for 5 minutes.

Fluff, then drop by 1/3 cupfuls onto hot griddle.

Flip when bubbles on surface subside.
