2 cans (8 oz. each) crushed pineapple, well drained
1/2 cup margarine, softened
1/2 cup sugar
1 teaspoon vanilla
1 cup flour
4 teaspoons grated orange peel
1 cup blanched slivered almonds, toasted
1 cup seedless raisins

***to toast almonds, place in single layer on cookie sheet, bake in 200º oven until just lightly browned

Make sure pineapple is well drained, press with spoon or fork. Beat together margarine and sugar until light and fluffy. Stir in pineapple and vanilla. Beat in flour and orange peel. Stir in almonds and raisins. Drop a heaping teaspoon of dough 2 inches apart onto greased cookie sheet. Bake 350º for 20-22 minutes or until firm. Cool on wire racks.
