"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

3/4 c. butter

1 tsp. salt
2 squares of unsweetened chocolate, melted and cooled

Directions:
Mix butter, sugar, eggs and vanilla thoroughly. Stir flour, baking powder and salt together then add to butter mixture and mix well. Divide the dough in half. Blend the melted chocolate into one half. Wrap each section of dough with plastic wrap and chill in refrigerator. When chilled, roll each section into an oblong shape about 12x9” then lay on top of each other. At this time you may roll the layers together to ensure that they adhere to each other before rolling up tightly. Chill again or freeze to bake later. When ready to use, cut, slices about 1/8” thick and bake at 400F for 8-10 min.

Personal Notes:
This recipe is very versatile. Instead of adding chocolate to the dough you may colour one half of dough green for Christmas and other red. Cinnamon pinwheel cookies may be made by spreading brown sugar, cinnamon and butter on rolled out dough before rolling up. Equally good is spreading jam or date paste. Use your imagination and the possibilities are endless. Great for the church bake sale!
