2 c. flour
8 strips of bacon
1 c. bacon grease
2 large onions
6 stalks of celery
2 large green peppers
6 cloves of garlic (minced)
3 c. okra
2 large cans of tomatoes
9 - 10 c. hot water
peeled raw shrimp
crab meat (optional)
oysters (optional)
2 bay leaves
2 Tbsp. celery salt
1 tsp. thyme
3 Tbsp. of File Gumbo powder
˝ c. parsley flakes
4 Tbsp. red pepper flakes
Salt & Pepper to taste
4 Tbsp. butter

Roux - 1 c. bacon grease, 2 c. flour and 8 strips of bacon.
In an iron stew pot or skillet cook the roux on low heat till the mixture starts to turn, it should cook stirring constantly till the roux is a deep color of a copper penny.
Now if you did this in a skillet dump the roux in a sauce pan and add onions, celery, green peppers, garlic, okra. Mix into the roux and sauté til brown. Add cans of tomatoes and 9 - 10 cups of hot water and mix well. Add peeled raw shrimp (crab meat and oysters if desired) with bay leaves, celery salt, thyme, gumbo powder, parsley, red pepper flakes and salt & pepper to taste. Add the butter. Simmer on low heat, stirring now and then until shrimp is done.
Serve over rice
