3 ⅓c. Cake and Pastry Flour (or 3 c. of All Purpose Flour)
1 c. Icing Sugar sifted
1-1¼ c. Butter softened
2 tsp. Vanilla
1 Egg
1 c. Raspberry Jam

1 c. Ground Pecans (powder like) for cookie edges
1 Egg white for cookie edges

Directions:
Combine: Flour, icing sugar, butter, vanilla and egg for cookie dough together in large mixer bowl. Beat on low speed until dough forms a ball.

Form cookie balls, and make thumb imprint in center. Dip sides of cookie in egg white, then dip in ground nuts to coat the edge of the cookie in nuts. Use a small spoon to add raspberry jam to center thumb indentation.

Bake at 400º for 15-20 mins.
