8 Medium Potatoes
2 Hard Boiled Eggs
2 c. Mayonnaise
½ c. Red Onion (minced)
2 T Yellow Mustard (enough to add color)
1 T Dill Pickle Relish (add pickle juice to slightly thin dressing)
Salt and Pepper to taste

Directions:
Directions:
Boil potatoes in skins.
Cool slightly and remove skins.
Cut potatoes into bite size cubes.
Add all other ingredients except for eggs in food processor or blender, mix thoroughly.
Pour over warm potatoes and stir gently.
Slice eggs and add to top.
Cool in refrigerator.

Best if made the night before.
