Grandma's Meatballs Recipe

Base
2 eggs
2 lbs. ground beef (At Least 90% lean)
¼ large green pepper chopped
1 small onion chopped
1 c. bread crumbs or 2 slices toast crumbled
¾ c. milk (may be slightly less)
1½ tsp. salt
1 tsp ground pepper
1 tsp brown sugar
Large can of tomato juice

Melanie's Version (triple recipe PLUS)
3 lbs. ground beef (At Least 90% lean)
3 lbs ground breakfast sausage
6 eggs
1 green pepper chopped
1½ Large Onion
3 c. bread crumbs
3 tsp. roasted garlic chopped
4½ tsp. salt
3 tsp. ground pepper
3 tsp. brown sugar
3 large cans of tomato juice (or V-8 vegetable juice)

Directions:
Directions:
1.) Mix all ingredients together in bowl using your hands until well blended. If moisture is needed, add more milk. If too much moisture add more breadcrumbs.
2.) Roll mixture into 1 inch balls.
3.) Bring tomato juice to boil
4.) Add meatballs to tomato juice one at a time stirring slightly so the meatballs don't stick
5.) Reduce heat to medium and cook for 2 hours stirring occasionally. (lower heat to low if meatballs continue to stick.

Melanie's add-ins:
Use large ice cream scoop (with swipe) to make uniform meatballs
Use large stock pot to cook in.

According to my Grandma Louise, this recipe was given to my great-grandparents, Ben and Mildred McCarty at a dinner party hosted by and italian coworker in the 1940's. Although my great-grandma made this recipe, it was their daughter, Louise, who immortalized it. Grandma Louise made meatballs for most pf the family functions of my childhood.
