Pastry for 2 crust pie
2 cans pitted tart red cherries (water pack)
3 Tbs. quick cooking tapioca
1/4 tsp. salt
1/4 tsp almond extract
1 tsp. lemon juice
4 drops red food color
1 1/4 c. sugar
1 Tbs. butter

Directions:
Directions:
Drain cherries. Measure 1/3 cup liquid into mixing bowl. Add tapioca, salt, almond extract, lemon juice and food color then cherries and 1 c. sugar. Mix and let stand a few minutes.
Fit pastry into bottom of pie pan and trim. Fill with cherry mixture. Dot with butter. Sprinkle with remaining sugar.

Make crisscross strips with remaining dough. Sprinkle top with sugar.

To keep rim from over browning, circle pie with a standup collar.

Bake at 425 degrees, 40 to 50 minutes. Let cool a bit before cutting.
