¼ C vegetable oil or melted shortening
½ C sugar
½ tsp salt
½ C milk
1½ C flour
2 tsp baking powder

Heat oven to 400º
Grease bottom of muffin cups or use paper liners. Beat egg with fork. Stir in milk and oil. Mix dry ingredients and sift into egg, oil and milk. Stir until moistened. Batter should be lumpy. Don't over mix. Fill muffin cups ⅔ full. Bake 20-25 minutes, or until golden brown. Serve warm.

When I was a little girl, we always went and got Grandma on Friday nights and went to the drive in movie. On Saturday night my parents would go out dancing, so I had Saturday and Sunday morning to enjoy the muffins she always made for me. I got to stay with her and sleep in her great big bed. I'm sure that my muffins are not as good as hers, but this is the recipe that I use. This has precise measurements, where I'm sure, that Grandma used a pinch of this and a handful of that.
