3 lbs. boneless skinless chicken breast halves
2tbsp. olive oil
2 tbsp. butter
1/3 c. flour
1 large egg beaten with 2tbsp. water
1 tsp. dried oregano or 1tbsp. fresh oregano
1 lb. thinly sliced provolone cheese

Heat oil and butter in a skillet. Preheat oven to 350ºF. Dip chicken in flour and then in egg mixture, letting the excess drip off. Saute chicken in skillet, browning both sides (about 3 minutes all together). Arrange chicken in buttered shallow baking dish. Sprinkle with salt, pepper and oregano. Top with cheese slices. Cover with foil and bake for 15 minutes. Remove foil and continue baking about 15-20 minutes.
