1 c. milk
2 T. butter
2 T. flour
1 (8 oz.) pkg. Jalapeno Jack cheese, grated
2 (10 oz.) pkgs. frozen spinach, thawed and squeezed of excess moisture
1 (14 oz.) can water packed artichokes, drained
1 can water chestnuts, sliced and drained
1 1/2 c. grated Monterery Jack cheese

Preheat oven to 350°. In a small saucepan, blend milk, butter, and flour. When mixture thickens, add the Jalapeno cheese and stir constantly until the cheese melts. In a large mixing bowl, combine cooked spinach, artichokes, and water chestnuts. Add the cheese sauce. Pour spinach mixture into a buttered 9x13 inch ovenproof dish. Sprinkle with grated Monterey Jack cheese. Bake 30 minutes. Serves 8 to 12.
