1 lb. lean ground beef
1/4 c. finely chopped onion
1 10-3/4 oz. can cream of mushroom soup
1 egg, beaten
1/4 c. seasoned bread crumbs
2tbsp. chopped parsley
dash of pepper
1/4 tsp. salt
2 c. mashed potatoes (about 5 potatoes)
1/4 c. shredded cheddar cheese

Directions:
Directions:
In frying pan, saute the beef and onions until the beef is browned and the onions are tender. Remove from heat and drain any excess grease. Add 1/2 can of cream of mushroom soup, the egg, bread crumbs, parsley, pepper and salt. Mix well. Press firmly into the bottom of a glass casserole dish. Mix together the mashed potatoes, remaining mushroom soup and the cheddar cheese. Place potatoe mixture on top of meat. Bake in 350º oven for 30 minutes.
