2 ripe bananas
2 c rolled oats
1 c dates, pitted and chopped
1/3 c vegetable oil
1 tsp vanilla extract
OPTIONAL ADDITIONS
Cinnamon sugar for rolling
1 egg
Walnut or pecan halves

Directions:
Directions:
Preheat oven to 350 degrees F
In a large bowl, mash the bananas.
Stir in oats, dates, oil, and vanilla.
Mix well, and allow to sit for 15 minutes.
Drop by rounded Tablespoonfuls onto an ungreased cookie sheet (a melon baller works well,or a 'small' cookie scoop is perfect if you want perfectly round balls)
Bake for 20 minutes in the preheated oven, or until lightly brown.
VARIATIONS
Add 1 egg
Roll in cinnamon sugar before placing on pan. Slightly flatten with 2 fingers.
Press a walnut or pecan half on top before baking.

When I entered this recipe I left the bananas out of the ingredients. Not sure how many bananas to add? Maybe more than 2?
