Tortillas....

1 cup flour
½ cup cornmeal
¼ teaspoon salt
1 egg
2 ½ cups cold water
Mix well and cook on ungreased griddle around 400 degrees

Enchilada Sauce...

Brown 1 lb. hamburger, ½ onion diced, 1 or 2 cans of chili beans. Simmer ½ hour.

Layer --- 1 tortilla, chili mixture, onions, cheese, another tortilla, chili mixture, and cheese.


Put in 350- degree oven for 5 minutes, or until cheese is melted.

It takes a little practice to make the tortillas correctly. You will probably throw away a lot of them the first time you try.

Cook them on a Griddle, not in a pan. Spray Pam on the griddle and wait until it gets hot. Put a couple of drops of water on the griddle, and if they bounce and make a noise, it is ready.

You will only use 1 big tablespoon of tortilla batter - then you spread it around into a circle or oval. It doesn't take long to make these. Remember, practice makes perfect!
