1/2 stick butter
1 TBS extra virgin olive oil
1 cup finely diced onion
1/2 cup finely diced celery
2-3 cloves garlic, minced
1/4 cup flour
1 quart half and half
2 14-oz cans of chicken broth
Salt to taste
1/2 tsp dried thyme
1/2 tsp drived parsley
1/4 tsp ground nutmeg
1 cup finely shredded carrots
1 cup coarsely chopped fresh spinach leaves
1 cup diced cooked chicken (leftovers, canned or rotisserie)
1 160ox package gnocchi

Melt the butter into the oil in a large saucepan over medium heat. Add the onion, celery and garlic and cook, stirring occasionally, until the inion becomes translucent. Whisk in the flour and cook for about one minute. Whish in the half and half. Simmer until thickened. Whisk in the chicken broth. Simmer until thickened again. Stir in remaining ingredients and simmer until the soup is heated through.

Nathan absolutely loves Olive Garden's Chicken Gnocchi soup, so when we found this recipe, it quickly became a favorite. It is best eaten fresh as the gnocchi gets mushy when it's leftover.
