8 large eggs
1 small celery stalk, finely chopped
1 small carrot finely chopped
2 TBS thinly sliced scallions
2 TB fat free sour cream
1 TB low fat mayo
2 tsp brown mustard
1 tsp cider vinegar
1/4 tsp each salt and pepper
Paprika to garnish

Hard boil eggs; peel and cool.

Halve eggs, place 4 yolks in bowl and discard the rest. Chop 4 of the egg white halves and add to bowl, mash well. Add remaining ingredients, blend.

Spoon filling into the hollow of the remaining 12 halves, mound to fill. Place on platter, cover & refrigerate at least one hour.

Sprinkle with paprika to garnish.

I don't care for deviled eggs myself, but this recipe gets rave reviews when made. It is an weight watchers' recipe so it's low in calories.
