1 c quick-cooking oats
1/2 c old-fashioned oats
1/4 c whole wheat flour
3/4 tsp baking soda
1 1/2 tsp Saigon cinnamon
1/2 tsp hymalian pink salt
1/4 c (1/2 stick) butter, softened
3 Tbsp stevia baking blend
1 egg
1 tsp pure vanilla extract
1/2 c unsweetened apple sauce
1/3 c dark chocolate chips, optional
1/3 c walnuts, chopped, optional

Directions:

Preheat oven to 350º F
Line a cookie sheet with parchment paper

In a medium bowl combine both oats, flour, baking soda, salt & cinnamon

In a second bowl, beat softened butter and truvia baking mix
Once combined, add egg, applesauce & vanilla
Beat till combined

Pour the wet mixture into the dry ingredients
Mix till combined
If using optional ingredients, fold into the cookie dough

Using a cookie scoop, portion out cookies onto the prepared baking sheet
Slightly flatten cookies intoxicating cookie shapes

Bake ~12 minutes or till edges are golden
Slide parchment paper (with cookies on it) off of the cookie sheet and onto the counter to cool
