8 medium sized red potatoes
1 lb. string beans (trimmed into bite-sized pieces)
8 medium sized tomatoes
1 medium sized sweet onion
½ bottle of Italian salad dressing

Directions:
Directions:
Boil potatoes, with skin-on, until easily punctured by a fork
Boil green beans until tender
Let boiled vegetables cool
Cut potatoes and tomatoes into bite-size pieces
Slice onion into small wedges
Gently mix all ingredients together
Refrigerate in icebox
Tastes best the day after preparing (the veggies have absorbed the flavor of the salad dressing)
Add more salad dressing, if desired

Note: Grandma Eraci used vinegar and oil and Italian spices on her salad instead of bottled dressing

Rhonda's mom, Rhoda, got this recipe from her Italian mother-in-law, Giovanna (Jenny). The first time I had dinner at the Eraci's house, in 1974, my future mother-in-law made this salad. I have made it many times throughout our marriage and it always brings back fond thoughts of my mother-in-law.
People say we aren't suppose to like our in-laws. Didn't work out that way for me or Rhonda. We both love our in-laws.
