2- cups sugar
2-teaspoon ground cinnamon
1- teaspoon baking soda
1/2 -teaspoon salt
3- eggs
1/2 -cups vegetables oil
1 cup applesauce
2- cups finely grated carrots
1/2- cup raisins
1- teaspoon vanilla extract
1- cup well drained crushed pineapple
1- cup flaked coconut


Frosting cream cheese
2- package of (3oz each )cream cheese at room temperature
3- cups comfy sugar
6- Tablespoons butter room temperature
1/2- cup nut Optional

1. In a large bowl combine flour sugar cinnamon baking soda and salt , add eggs, oil, carrots and vanilla, Beat until combined. Stir in pineapple, coconut and nut if using

2. Pour into prepared 9 x 13
baking pan. Bake at 350 for 50 to 60 minutes or. Or until toothpick inserted in center comes out clean cool on wire rack

3. Frosting beat cream cheese and small mixing bowl until fluffy add confecctioners sugar butter and vanilla. Beat til smooth. Frost cake sprinkle with nuts if desired store and refrigerator
