1 cup shortening
1 cup sugar
2 eggs
1 cup mashed bananas
1/2 cup buttermilk (can substitute plain yogurt)
1 teaspoon vanilla
3 cups flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 cup chopped walnuts (optional)


Directions:
Directions:
Cream shortening, sugar, and eggs.
Add bananas, buttermilk, and vanilla.
Measure, then stir in flour, baking soda, and salt. Add walnuts if desired.
Chill batter for 1 hour.
Drop by tablespoonfuls 2 inches apart on a greased cookie sheet. Bake at 375 degrees for 10 – 12 minutes.
