2 lbs Hamburger, preferably lean
2T Liquid smoke
2T Morton's Tenderquick
2tsp garlic powder
2tsp onion powder
2tsp pepper

Be creative. You can use any spices that you like in any amounts.
For example, you can use Italian seasoning for italian sausage or
jalapenos if you like it caliente. I use lots of cayenne.
DO NOT USE SPICES WITH ADDED SALT! (Like Cavendars)
Morton's tenderquick is basically salt, so any extra salt will make the
sausage too salty to eat.
Mrs. Dash is salt free and there are different types.

Mix everything together and form into 2 logs. Wrap in plastic and put in the fridge for 24 hrs.
Take off plastic and bake at 300° for 30- 45 min. Till done
