2 packages yeast
1/2 c. warm water
1 1/3 c. boiling water
1 c. quick-cooking rolled oats
1/2 c. light molasses
1/2 c. shortening
1 1/2 t. salt
5 - 6 c. flour
2 eggs, beaten

1 egg white, beaten
1 T. water

Directions:
In small bowl, mix yeast in lukewarm water
In large bowl combine boiling water, oats, molasses, shortening, and salt. Cool to lukewarm.
Stir in 2 c. flour and beat well.
Add softened yeast and eggs. Beat well.
Stir in enough of remaining flour to make a soft dough.

Turn out onto lightly floured surface and knead until smooth.
Shape into ball and place in lightly greased bowl, turning to grease surface.
Cover and let rise in warm place until doubled, about 1 1/2 hours.

Punch down dough. Divide in half. Cover and let rest 10 minutes.

Grease and sprinkle with oatmeal two bread pans. Shape dough into loaves and put in pan. Cover and let rise until double, about 45 - 50 minutes.

Brush with mixture of egg white and water and sprinkle more oatmeal on top

Bake at 400º for 25 - 30 minutes, covering with foil in last minutes if the loaves are browning too quickly. Remove from pan and cool on wire rack.
