Cake


Ingredients:

2½ c. flour
1 c. sugar
2 tsp. baking soda
1 tsp. baking powder
1 pinch salt
½ lb. oleo (2 sticks)
1 egg beaten
1 T. milk
1 tsp. vanilla

Mix and spread in 18x12x1 inch cookie sheet
 

Filling


Ingredients:  
Ingredients:  
4 large Philadelphia Cream Cheese (8 oz)
1 c. sugar
4 egg yolks (note: save egg whites*)
1 tsp. vanilla
1 large can crushed pineapple, well-drained
Graham cracker crumbs (for top of filling)

Directions:

Beat very well.
Beat egg whites* and fold into mixture.
Spread cheese mixture (filling) on top of cake mixture.
Sprinkle some graham cracker crumbs on top.
Bake at 350 degrees, 30-35 minutes. Let cool before icing.
 

Icing


Ingredients:  
Ingredients:  
1 c. Crisco
1 c. sugar
1 c. canned milk (cold)
1 tsp. vanilla.
Coconut, shredded

Cream Crisco and sugar well.
Add milk & beat well. Add vanilla.
Ice cake. Sprinkle with coconut. (Vince says only put coconut on half the cake, for those that don’t like it!)

Cake is good without any icing if wanting to avoid Crisco or try some some other toppings (cherry, blueberry, etc)
